Imagine being so powerful that one action can make a major impact. In a sea of like mindedness, a slight deviation that goes such a long way, it changes the very flavor of the sea. And everything changed from then on. Take Riwaka hops from New Zealand for example. Uh yeah, we were talking about hops. We only used a little bit in the beer, like 8% of total weight, and the rest of the entire hop bill was a few of our favorite lots of Citra. So this beer is 92% Citra hops. And you can still taste the Riwaka. Yes, it’s all yellow peach and tangerine and papaya….but that distinct little zhuzh of asphalt and beachgrass is there. What an impressive force of nature!
