Big Softy
Fun fact: The concept for this recipe came together after a few separate conversations with brewer friends over the course of a full year! We’d been sitting on a box of Superdelic, a newer hop from NZ Hops and were trying to figure out what to pair with it to make it really pop. One friend said they get a lot of strawberry from it, which we’d yet to see. But, sometimes we do get strawberry from Loral, especially in its early years in the ground. And to us, both of these hops are classified as “soft” – meaning they pack less bitterness than their alpha suggests, have floral undertones, and present more subtle fruit flavors ala pear, plum, & melon that we often use for depth of flavor as a 3rd or 4th hop in a recipe. So we leaned in, adding a little bit of white wheat, and implemented our brightest/sharpest Citra lot to meld it all together. The end result is an uber soft, luscious, enveloping bouquet of orange blossom, flintstone vitamins, and golden raspberries. And let’s be real, who doesn’t like a big softy?!
