For the second IPA on our new system, we had a better idea of what the wort would be like – but we still found ourselves waiting on how different/effective the hop utilization would be. You can’t really get a solid grasp on hot side components of bitterness, flavor, aroma until the beer ferments out and the yeast drops, which takes about 12 days for us. As a result, we found ourselves patiently staring at the fermenter while the beer took it’s time FUCKING BUBBLING AWAY LIKE AN IDIOT WHY IS THIS TAKING SO LONG!?! UGHHHHHHH…… HURRY UP WE NEED TO KNOW WHAT YOU TASTE LIKE ALREADY!
