Some hops are harder to come by and Idaho 7 is one of them. It’s a relatively new variety developed by Nate Jackson of Jackson Hop Farm in Wilder, Idaho and it displays big notes of pine, resin, & lemon peel. We recently fell into some, so we made an IPA with them. Paired with another piney/resiny/citrusy hop in Simcoe and cut with some fruity Amarillo, this is one unexpected, fortuitous union.
