We went straight German Pilsner on this recipe – Weyermann Pilsner malt, x & y hops, our house lager yeast – and when it came to making the decision or not to clarify it…we tasted it off the tank and were like, let’s keep it as is! A light sheen of haze, a touch more rustic, a bit of amplified character from the malt and yeast.
