We brew lots of wet hop beers every harvest. There’s no other beers we love to make more. But that time window is fleeting – roughly 6 weeks of harvest and then we’re all left wanting and waiting til next year. So we tried something out. We gassed, vacuum-sealed and froze 5# of Citra from Tributary Farms within minutes of getting the hops back from the farm. It was 3 hrs from picker to freezer. Could we seal in the wetness magic and save it for a later date? You can be the judge of that (but we think “Yes. Well, kinda. There’s a leafy chewyness there, and some added citrus and berry oils, but it’s not as bright and potent as the fresh wetness.”)
