A few short years ago, the hottest DIPAs weren’t Juice Bombs Dot Com. They had a little crystal malt, a whisper of haze (if any), and a sensory explosion of pine and resin and pithy citrus. Chinook hops were present. Simcoe and Centennial were the cool hops on the block. Citra was still Hop 366 and Hop 522 was but a twinkle in Jason Perrault’s eye. We gave this DIPA a modern twist, but let this serve as a friendly reminder that those beers are still delicious. Respect your Elder.
