Going Public IPA
Ok this week we’re taking our hop bill PUBLIC. Like, with 100% public varieties – Vista, Comet, Cascade – grown by farms in Washington (Tributary & Loza), Oregon (Crosby & Goschie), and Idaho (Jackson), in the form of T90 pellets, Cryo & CGX to boot! Why? Because public hops are important! These varieties are funded by the USDA, with help from some universities (WSU & OSU) and organizations (HRC and Hop Quality Group). This means that any hop farm in the US has access to grow them at affordable rates. That said, these varieties tend to vary widely in quality, because there’s less resources and less management behind them – so finding those 🔥🔥🔥 lots takes some work – from sensory rubs to figuring out pick dates to talking with the farmers on their philosophies. At Cloudburst, about ~80% of the hops we use in a given year are proprietary – but we still feel it’s important to use lesser known/popular public varieties in modern, hop forward recipes. After all, diversity (in every way and form) is important for a healthy industry (and community, and world).
