Okay, so most hops come from similar lineage/parentage (Tettnang, Golding, Brewer’s Gold, Fuggle, etc) although with all the breeding programs we have now, there’s a little more genetic diversity out there. But there’s one hop that’s way the fuck out there – Zappa. It’s been grown by CLS Farms in Moxee going on 11 years, and while acreage ebbs and flows, there’s still a few acres in the ground for this 2025 harvest. This hop is unpredictable, constantly burring, and a beast to grow. It’s also so distinctive in beer that a little bit goes a long way…which we’ve done here. This IPA is mostly Citra and Mosaic. Just a splash of Zappa to the whirlpool and a little more to the dry hop, all to give that aforementioned ever-so-popular modern hop combo a little twist. It’s still all pineapple and tangerine but there’s a little je ne sais quoi too.
