So we’re drinking an IPA, as we used to call it, and all of the sudden – BAM! – the stuff is light and hazy and soft with a little minerality. Yeah yeah – like some kind of malt bill with 2-row, pilsner, pale wheat, & flaked oats. How? WHY!? We’ll spare you the irrelevant details and quickly develop the story line…But here’s the rub – the hop bill, it’s like that hasn’t changed. Simcoe, Chinook, Amarillo, Cascade, and Centennial. We’re talking heritage hops. Northwest hops. Grapefruit, Pine, Resin…and a dry finish. It’s like when the Present meets the Future meets the Past…
